1 avocado
2 tomatoes
Juice of half a lemon
1/3 c kalamata and green olives (I like a mix of both)
1/3 cup fresh parsley
tsp fresh thyme
dribble of organic extra virgin olive oil
salt and pepper to taste
chop up avocado and tomatoes, mix together with the lemon juice. chop up pitted kalamata and green olives. Finely chop up parsley and thyme, mix in with salad with olive oil, salt and pepper. Serve on bed of field greens. yum -Rita Moran
